I am Davide Maffioli, Chef and Owner, along with Tiziana Caretti, of Vero Restaurant in Varese (italy), which has been reported in the Michelin Guide in 2019 and 2020 as the only 100% vegan restaurant in Italy.
Alongside my hospitality diploma, at the age of 16 I started working in traditional restaurants in Italy and Switzerland, and my career went on for 15 years.
In 2010, I decided to revolutionize my cuisine and go vegan. I was an “omnivorous” chef, so I completely changed what I used to eat, my strategies and techniques to “only” use plant-based ingredients. That’s what I’ve been doing for 13 years now.
Listening to feedbacks and taste preferences of my guests has given me the opportunity to develop precise and reproducible techniques and cook indispensable dishes in my restaurant’s cuisine.
Traditional haute cuisine provided me with the perfect foundation to achieve a winning result for my vegan haute cuisine, in terms of taste, texture, and presentation.
