I am Davide Maffioli, Chef and Co-owner, alongside Tiziana Caretti, of Vero Restaurant in Varese, Italy, which was featured in the Michelin Guide in 2019 and 2020 as the only 100% vegan restaurant in Italy.

My culinary journey began at the age of 16 when I started working in traditional restaurants in both Italy and Switzerland, a career that spanned 15 years.

In 2010, I made a bold decision to completely transform my cuisine and adopt a vegan lifestyle. As a formerly omnivorous chef, I overhauled my dietary choices, culinary strategies, and techniques, focusing exclusively on plant-based ingredients. I’ve been passionately dedicated to this path for 13 years now.

Listening to the feedback and taste preferences of my guests has allowed me to develop precise and replicable techniques, creating indispensable dishes for my restaurant’s cuisine. My background in traditional haute cuisine provided me with a solid foundation to achieve excellence in vegan haute cuisine, encompassing taste, texture, and presentation.
